Aged for a minimum of 60 days on thick rough-cut spruce boards from Northern Saskatchewan. Caerphilly style, slightly crumbly with subtle lemony notes.

Kevin Petty was visiting Sion, Switzerland for a friend’s wedding when he was first inspired to get into cheese. He was exposed to the best artisan cheesemakers in the world.
