Nutrition: Similar nutrition to regular whole grain wheat. Spelt has a high water solubility, meaning its vital nutrients are quickly absorbed into the body.
Gluten content: Low-Medium (Spelt is more easily digested than other forms of wheat, and some people with wheat intolerances may be able to tolerate spelt)
Use: Mill the grain and use anywhere you would use regular wheat flours. Often used for flatbreads. Natural sugars means it produces a sweeter tasting bread.
