Barley Risotto

Ingredients

  • 1 bag of Progressive Foods Quick Cooking Barley
  • 1/2 bag of Willow Creek groats
  • Parmesan cheese
  • Chicken Stock (2L)
  • Celery (1/2 cup)
  • Onion (1/2 onion)
  • Cherry and Berry Delights (1/2 cup)
  • White wine (splash)
  • North Prairie Gold Canola Oil (2 Tbsp)
  • Pickled ginger

Directions

Saute onions, celery, barley, and groats in  oil until they just start to stick to the pan. Deglaze with white wine and layer in chickenstock. Reduce and layer in more until barley is almost fully cooked. Add currants and cheese. Season with salt and pepper. Enjoy.
