Ingredients
Salad:
- 1 cup cooked NorQuin quinoa
- 1 cup cooked Daybreak Mills organic lentils
- 1 cup chopped cooked Pine View Farms chicken breast
- ½ purple onion; small, diced
- 1 cup cherry tomatoes cut in half
- ¼ tsp. salt
- ½ tsp. pepper
- ½ cup crumbled Coteau Hills feta cheese
- ½ cup dried Cherry and Berry Delights sour cherries
Dressing:
- 2 parts North Prairie Gold canola oil
- 1 part balsalmic vinegar
- 1 part Over the Hill Orchard sour cherry splash
Directions
Combine all salad ingredients in a large bowl. Combine dressing ingredients in a smaller bowl and pour enough dressing over salad mixture to taste. Serve with crusty multi-grain buns or crackers.
