Chocolate Cherry Bomb Brownies



Cheesecake Mixture:

  • 1 egg
  • 8 oz (1 cup) cream cheese
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup D.A.M.N. Fine Foods Cherry Bomb Fruit Spread

Brownie Mixture:

  • 4 oz dark (bittersweet) chocolate
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 1/2 cup Daybreak Mills all-purpose flour


Heat oven to 350 degrees F and grease the pan.

For the cheesecake mixture, beat egg in a mixing bowl, then add the cream cheese, sugar, and vanilla extract. Swirl Cherry Bomb into mixture (do not mix thoroughly).

For the brownie mixture, melt the chocolate and butter together in microwave. When melted, stir well and add the sugar. Add the eggs a little at a time, beating well. Gently stir in the flour.

Spread two thirds of the brownie mixture over the bottom of the pan. Spread the cheesecake mixture on top, then spoon on the rest of the brownie mixture in heaps. Using a skewer or toothpick, swirl the mixtures together again.

Bake in 350 oven for 30-35 minutes or until just set in center. Leave to cool in the pan, then serve.

These brownies are great warm with ice cream on top!
