Ingredients

  • 3/4 cup Alliga orange flax oil
  • 3 Elite Poultry eggs
  • 1 1/2 cups granulated sugar
  • 3 cups grated Spring Creek Carrots
  • 2 cups Daybreak Mills Pastry Flour
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/8 tsp ground cloves

Directions

Mix oil, eggs, and sugar. In a separate bowl, combine flour, salt and spices. Add to wet ingredients then stir in carrots. Bake in a greased 11 x 17 pan at 350 for 35-40 minutes until a toothpick inserted in the centre of the cake comes out clean. Cool completely before frosting.

For the Frosting:

  • 1 212ml jar Petrofka Bridge Orchards Carrot Cake Jam
  • 1 8oz package light cream cheese
  • 1/2 cup Notre Dame unsalted butter
  • 2 cups icing sugar

Cream room temperature butter with cream cheese and then add jam. Incorporate icing sugar a bit at a time.
