Einkorn Mushroom Stew

Ingredients

  • 3/4 cup Diefenbaker Seed Processors green lentils 
  • 3/4 cup Daybreak Mills einkorn grains
  • 2 packages button mushrooms
  • 1 medium yellow onion
  • 3 bay leaves
  • 5 cloves garlic, minced
  • 3-4 vegetable stock cubes
  • 9 cups of water
  • salt and pepper to taste

Directions

Sautee garlic and onions together over low heat. Combine with all other ingredients in a medium sized slow cooker. Cook on low heat for 6-8 hours. Stew is ready when einkorn is puffed up and the lentils are soft.
