Ginger Honey Chicken


    • 2 pounds diced uncooked Pineview Farms chicken breast
    • 1/3 cup Daybreak Mills All Purpose flour
    • 1/2 tsp M&M garlic powder
    • 4 tbsp. Notre Dame butter (not margarine)
    • 1/4 cup TuBees Gourmet Ginger Honey
    • 3 tbsp lemon juice
    • 2 tbsp soya sauce


    Preheat oven to 350C.

    In a shallow dish combine the flour and seasonings. Dip each piece of chicken in the flour mixture and coat evenly. Melt 2 tbsp of butter in a shallow baking dish, large enough to accommodate the chicken in a single layer. Arrange chicken in the pan and bake uncovered for 30 minutes.

    In a saucepan, melt the remaining butter and add the honey, lemon juice and soya sauce. After the chicken has baked for 30 minutes, turn each piece over and pour the sauce mixture evenly over the chicken.

    Bake another 30-40 minutes, basting frequently. Serve over rice if you'd like. Note: If you would like sauce for over the rice, double the sauce ingredients.
