Greek Lentil Salad

 

Ingredients

  • 540 g. Diefenbaker Seed Processors lentils (cooked)
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup onion, chopped
  • 1 1/2 cups Floating Gardens cherry tomatoes, halved
  • 1/2 cup Grandora Gardens green pepper, chopped
  • 1 cup Grandora Gardens cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Floating Gardens fresh parsley, chopped
  • 1/4 cup Three Farmers Camelina Oil
  • 1/4 cup lemon juice
  • 1 tbsp dried oregano

Directions

In a large bowl, combine lentils, olives, onion, tomatoes, green pepper, cucumber, feta cheese, and parsley. Whisk together oil, lemon juice, and oregano. Add to lentil mixture and toss to coat vegetables. Serve immediately or can be covered and refrigerated for up to 1 day before serving.
