Preheat oven to 325C. Line an 8x8 pan with foil and spray with cooking spray. Mix together honey, corn syrup, oats, oil, vanilla, pumpkin spice and cinnamon. Gently stir in the semi sweet chocolate chips. Bake for 10-12 minutes. Let cool completely. Drizzle with melted white chocolate. Allow to cool before cutting into bites. Store in an airtight container.
