Lentil Fritter

 

Ingredients

  • 1 cup Diefenbaker Seed Processorssplit red lentils (cooked)
  • 2 cups water
  • 1 egg
  • 1 cup onion, grated
  • 2-4 tbsp. Daybreak Mills all purpose flour
  • 1 1/2 tsp cumin
  • 1 1/2 tsp coriander
  • 1 tsp salt
  • 1/2 tsp ground pepper

Directions

Cook lentils in water, uncovered over med heat for 10 minutes until very soft. Cover and let stand for 3 minutes. Drain, then add rest of ingredients.

Pulse all ingredients together in a food processor. Chill one hour, then shape into balls or patties and fry in oil until lightly brown.
