Ingredients

  • 2 cups orzo, cooked, rinsed and drained
  • 2 cups beluga lentils, cooked until tender, rinsed and drained
  • 4 medium carrots, diced
  • 1 green pepper, diced
  • 1/2 medium onion, minced
  • 1 garlic clove, minced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 cup canola oil
  • 1 cup garlic cider vinegar
  • salt and pepper, to taste

Directions

Mix all ingredients and let sit at least two hours before serving to allow flavours to meld.
