Quinoa Banana Bites

 

Ingredients

  • 1 cup Norquin Quinoa
  • 3 overripe bananas, mashed
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 eggs
  • 1/3 cup CanPro canola oil
  • 1/3 cup brown sugar
  • 1 1/2 cups Daybreak Mills Stone Ground Flour
  • 1 tsp baking powder
  • 1 tsp baking soda

Directions

Mix all ingredients in a medium bowl, ending with the flour. Top with another 1/2 tsp cinnamon and 2 tbsp brown sugar. Bake in an 11 x 17 inch lightly oiled pan. Makes a perfect mid morning snack or a healthy dessert!
