- 1 cup NorQuin Quinoa
- Grilled Pine View Farms Chicken chopped (3 Chicken breasts or 4 chicken tights)
- 1 Celery stalk
- 1/2 Red bell pepper, chopped
- 1/2 Yellow bel pepper, chopped
- 1/4 cup chopped Floating Gardens parsley
- 1/4 cup edamame
- 4 Tbsp Three Farmers Camelina oil
- 2 Tbsp Gravelbourg French Mustard
- 2 Tbsp rice vinegar
- 2 Tbsp ponzu sauce
- 1/2 Tbsp peanut butter
- 1 Tbsp lime juice
- 1/4 tsp garlic powder
- 1/4 tsp sea salt
- 1/4 tsp pepper
Quinoa salad tacos (chicken)
- Cook the quinoa according to the instrutctions on the box.
- Toss the chicken (already grilled), quinoa and other incredients with the Dressing.
- Serve chilled room temperature.
- Combine all the ingredients, mix them well.
- Adjust the seasoning to taste if desire.
