Red Lentil and Farmer's Sausage Stew
Chop all veg and mince garlic. Sauté all veg except tomatoes and potatoes in Camelina oil. Add lentils, tomatoes, spices, sausage, potatoes and water and bring to a boil. Reduce heat and simmer until lentils have softened and potatoes are tender. Serve with fresh bread and top with aged cheddar.
