Red Lentil and Farmer's Sausage Stew

 

Ingredients

  • 3 cups Diefenbaker Seed Processors red split lentils
  • 2 stalks celery
  • 4 Spring Creek Gardens medium carrots
  • 2 Spring Creek Gardens large potatoes
  • 1 Grandora Gardens green pepper
  • 1 Spring Creek Gardens medium onion
  • 3 garlic cloves
  • 2 cans of tomatoes or 4 very ripe fresh tomatoes
  • 2 cups crumbled, uncooked J&J farmer's sausage
  • 2 tsp dried basil
  • pinch of cinnamon
  • 2 tbsp. Three Farmers Camelina oil
  • 4 cups water

Directions

Chop all veg and mince garlic. Sauté all veg except tomatoes and potatoes in Camelina oil. Add lentils, tomatoes, spices, sausage, potatoes and water and bring to a boil. Reduce heat and simmer until lentils have softened and potatoes are tender. Serve with fresh bread and top with aged cheddar.
