Whisk together 3/4 cup milk and 1 egg. Add 1 cup Only Oats Pancake Mix and whisk until batter is smooth. Heat a lightly oiled frying pan over medium high heat and pour in 1/4 cup batter. Tilt and rotate pan in all directions to make batter form a circle approximately 7 inches across. Flip crepe once bubbles have formed and top is no longer shiny, then remove from pan once both sides are lightly browned. Line a crepe with a thin slice of ham, heated in the frying pan. Steam asparagus stems until heated through but still crisp, and lay two on each crepe, tips at opposite ends. Drizzle 1 tbsp of Hollandaise sauce over asparagus and ham and top with 1 tbsp white cheese such as feta, goat, brie, or mozzarella. Roll crepe and top with 1-2 tbsp of sauce. Heat in oven or microwave to melt cheese. Recipe yields 6 crepes.
