Mix all ingredients except green onions and Camelina oil in a large bowl.
Heat oil in a frying pan and sauté onions until softened. Add to the rest of the ingredients.
Grease a 12 cup muffin tin or line with muffin papers. Fill three quarters of the way and bake at 350F until puffy and golden, about 35 min.
*Add 1/2lb cooked sliced breakfast or farmer's sausage to mixture before cooking, if desired.
