Sour Cherry Breakfast Muffin

 

Ingredients

  • 1 1/4 cups Daybreak Mills all-purpose flour
  • 1/4 cup wheat germ
  • 1/2 cup Willow Creek Organics rolled oats
  • 1/2 cup Willow Creek Organics bran
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup nuts or seeds
  • 3/4 cup thawed Everyday Farms sour cherries, drained
  • 1 egg
  • 1 cup mashed bananas
  • 1/2 cup buttermilk
  • 1/3 cup brown sugar
  • 1/4 cup oil
  • 1/2 cup chopped apples

Directions

In a large bowl whisk together flour, wheat germ, oats, bran, baking powder, baking soda, seeds, and salt. In another bowl beat egg and oil. Add brown sugar and beat. Add banana and buttermilk and beat until blended. Add egg/oil mixture to flour mixture. Add cherries and apples and mix gently until just moistened. Fill paper lined or grease muffin cups 3/4 full. Sprinkle with cinnamon and brown sugar. Bake in 375º oven for 18-20 minutes.
