Spicy Lamb Meatball



The Meatball:

  • 1 pound SaskMade ground lamb
  • 1 egg
  • 1/2 cup Willow Creek groats
  • 1 tsp chili flakes
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 cup Cherry and Berry dried sour cherries
  • 1/2 cup 2% milk

The Sauce:

  • 1 tsp chipoltle
  • 2 tbsp Three Farmers camelina oil
  • 1 can Sans Marzano tomatoes
  • 1/2 tsp chinese 5 spice
  • 7 cloves of garlic, minced


The Meatball: mix ground lamb, milk, spices, groats, and seasoning until well combined. Then, add egg to bind the mixture. Form desired size of meatballs. Cook at 350F for 45 minutes. 

The Sauce: heat saute pan on medium. Saute garlic in oil until just starting to brown. Add chipotle paste and chinese 5 spice. The add the tomatoes and turn the heat to low. Simmer for 1 hour, let the tomatoes gently break down and you can press on them with a wooden spoon while stirring occasionally. Season with salt and pepper.
