The Ultimate Can"EH"dian Salad

Ingredients

  • 1 cup cooked Willow Creek Organics black beans
  • 1 cup cooked Daybreak Mills Organic green lentils
  • 1 cup cooked Diefenbaker Seed Processors chickpeas
  • 1 1/2 cups cooked Daybreak Mills Organic pearl barley
  • 2 cups Floating Gardens baby arugula
  • 1 1/2 cups Grandora Gardens diced red bell pepper (approximately 1 whole pepper)
  • 1/2 cup Cherry and Berry Delights dried sour cherries chopped
  • 2 tbsp. finely sliced green onion (approximately 1 whole onion)

Vinaigrette

  • 1/4 cup Petrofka Bridge Orchards apple cider vinegar
  • 1/4 cup North Prairie Gold Canola Oil
  • 2 tbsp Gravelbourg German Mustard
  • Salt and pepper to taste

Garnish (optional)

  • 1/4 cup Willow Creek Organics toasted sunflower seeds

Directions

Toss prepared pulses, barley, arugula, cranberries, and onion together in bowl. Whisk vinaigrette ingredients in small bowl until fully combined. Toss the prepared vinaigrette with the salad. Season and serve. Garnish with toasted sunflower seeds.
