Whoopie Pies

 

Ingredients

  • Only Oats Decadent Chocolate Muffin Mix
  • 1/3 cup North Prairie Gold canola oil
  • 4 eggs
  • cream cheese or buttercream icing

Directions

Combine 2 cups Only Oats Decadent Chocolate Muffin Mix with 1/3 cup oil and 4 lightly beaten eggs. Mix just until batter is moist and combined. Spread 1 tbsp batter into whoopie pie pans that are greased or lined with parchment paper. To make without whoopie pie pans, spoon 1 tbsp batter onto cookie sheet, leaving room for batter to spread. Bake for 8-10 minutes at 350ºF. Cool and spread cream cheese or buttercream icing between pies. If using cream cheese, store in refrigerator or freeze. Try variations such as peanut butter or mint icing for festive Christmas baking. Recipe makes 20 whoopie pies.
