Wild Rice Crepes with Honeyed Saskatoon Greek Yogurt Mousse

 

Ingredients

     

    Crepes:

    • 1 cup cooked Northen Lights wild rice
    • 1 cup Wild Man Ricing wild rice flour
    • 1 tsp baking powder
    • 2 eggs
    • 1 cup milk
    • 1/4 cup North Prairie Gold canola oil

    Mousse:

    • 2 cups full fat Greek yogurt
    • 2 pkg unflavoured gelatine
    • 1/4 cup Northern Blossoms honey
    • 1/4 cup orange juice
    • 1 cup frozen Prairie Berry Saskatoon Berries

      Directions

      Mix crepe batter and cook in a crepe pan or regular fry pan. Layer on a plate and set aside.

      Combine saskatoons, honey, gelatine, and orange juice in a small sauce pan.
      Bring to a boil then and whisk to dissolve gelatine.
      Transfer to bowl to cool then fold in yogurt. Chill an hour or so until set.
