Einkorn is considered the 'grandfather of wheat' and is an ancient grain believed to be 10 000-12 000 years old. It is mans first cultivated variety of wheat, and has exceptional flavour and nutrition.
Compared to other varieties of cereal grains, Einkorn contains higher amounts of protein, iron, beta-carotene (Boosts immunity, helps prevent cancer and heart disease), Vitamin A (Healthy eyes, reproductive organs and prevention of many cancers), lutein (Prevention of macular degeneration and cataracts), and riboflavin (Used by the body to create energy and is an antioxidant that slows aging). Einkorn also retains more of its nutrients during the baking process than newer varieties of wheat. Due to the fact it is an ancient grain, Einkorn contains less gluten than other wheat types and is easier for those who are gluten intolerant to digest.
Use Einkorn flour anywhere you would use regular wheat flours. Produces a denser type of bread and makes great pancakes, cookies, biscuits and flatbreads.
