Ancient Grain 10 000-12 000 years old (the first cultivated variety of wheat)
Nutrition: Compared to other varieties of cereal grains, Einkorn contains higher amounts of protein, iron, beta-carotene (Boosts immunity, helps prevent cancer and heart disease), Vitamin A (Healthy eyes, reproductive organs and prevention of many cancers), lutein (Prevention of macular degeneration and cataracts), and riboflavin (Used by the body to create energy and is an antioxidant that slows aging). Einkorn also retains more of its nutrients during the baking process than newer varieties of wheat.
Gluten content: Low (the lowest gluten content of the wheat type grains.)
Use in: Use the grain to bulk up soups and stews or mill and use anywhere you would use regular wheat flours. Produces a denser type of bread.
